This concept, which emerged in the late 20th century and gained stronger recognition from 2006 onwards by physicians Laura H. Kahn and Thomas P. Monath, and veterinarian Bruce Kaplan, refers to the fact that the health of our farm animals is fundamental to the health of people.
Origin of the One Health concept
The One Health concept now expands on the traditional veterinary motto “Hygia pecoris, salus populi” (“The hygiene of livestock is the health of the people”) by encompassing a third fundamental point in the equation: the health of the ecosystem.

A farm model based on soil health through proper pasture management, and where animal welfare prevails, results in more nutritious meat, and therefore, healthier for human consumption. This is another, much more global, view of the relationship between livestock and human health.
Regenerative livestock farming is good for you, good for our animals, and good for the environment.
Far from being coincidental, meat from ruminants fed 100% on pasture contains more omega-3 fatty acids (beneficial for neurological function and the cardiac system), fewer omega-6 fatty acids (with a pro-inflammatory effect), and a higher proportion of beta-carotene antioxidants (precursors of vitamins A and E). In the case of pastured chickens, their products contain 91% more Omega 3, 52% less saturated fat, and 407% more Vitamin E (sources: Grass-fed Meat Producers Association and APPPA- American Pastured Poultry Producers Association). In short, animals are healthier from a nutritional and animal health point of view, since their well-being and absence of stress lead to a better immune system and, therefore, fewer diseases.

On the other hand, the directed grazing of animals, based on rapid movements of the grazing area (less than 3-4 days) followed by long periods of rest, turns well-managed pastures into an important tool in the fight against climate change. The grasslands are transformed into large atmospheric carbon sinks and increase the water retention capacity of the land (an increase of 1% in the organic matter of the soil has the capacity to retain 100,000 liters per year per hectare). All of this undoubtedly contributes to cushioning and better supporting the effects of climate change.

It is fascinating to observe reasonably how all the elements mesh together. We do not have to create new machines, just pay attention to the processes that have evolved naturally and extremely efficiently for millions of years, learn from them and try to imitate them in the most reliable way for the sake of global benefit.
